Saheena is a lovely East Indian delicacy made of dasheen bush or as others know it callaloo bush. This method is the “roll up” method
INGREDIENTS
12 dasheen leaves (taro)
3 cup split peas powder
1 cup flour
2 1/2 cup water
1 tsp. saffron powder
1 tbsp. baking powder
1/2 tsp salt
1 tbsp green seasoning
PREPARATION
1) Mix the ingredients together to form a paste
2) Wash and clean the leaves removing the stems
3) Open one large dasheen leaf face down and rub paste on it.
4) Place another leaf on top and repeat the earlier step.
5) Continue layering and pasting each layer until the paste is finished or the leaves are used up.
6) Roll tightly together and tuck the ends.
7) Place in a clean plastic bag and put into boiling water to steam. Make sure the knot is above the water
8) Remove after 15 minutes and leave to cool.
9) Cut in 1/2 ” slices.
10) Paste some of the thicker mixture on both sides.
11) Fry until golden and drain.
Serve with a good tamarind chutney.
